Easy CheeseCake

This is not done in your standard spring form pan, however, its easy and YUMMY. Hope you love it, too.

NEED:

2 packages creme cheese,
1 cup sugar,
1 tsp. vanilla
1/2 tsp. lemon jc,
2 eggs
2 tbs. sour creme

Cream the creme cheese and sugar with mixer; add eggs and vanilla, lemon juice and sour creme, mix together and place in your favorite crust, chocolate or vanilla or graham cracker crust.

Bake at 350 for 50-60 minutes.

Armenian Nutmeg Cake

This was given to me by my friend, Julie, in Australia. It's the best coffee type cake. I love it. Hope you do too.

NEED:

4 ounces of butter
1 cup brown sugar
2 cups Self Rising Flour
Mix the sugar and flour then cut in the butter. (that means take 2 knifes and short of cut the butter into small pieces..keep processing until all cut very very small)

Beat 1 egg in 1 cup of milk. Add 1 teaspoon of baking soda and 2 teaspoons of nutmeg

Press ½ the flour/sugar/butter mixture into an 8” pan, sprayed with cooking spray.
Mix the remaining ½ mixture with the milk/egg mixture.
Pour over the pressed base. Sprinkle the chopped walnuts over the top
Bake for approximately 1 hour at 350 degrees.

Potato Puff

This is great for left over mashed potatoes or you can make them fresh and use this to jazz them up

NEED:

A full serving of mashed potatoes ( enough to serve 8 )
8 ounces of creamed cheese....room temperature
salt
pepper
1 tablespoon of butter
diced onion -- optional...can be diced VERY small and used raw or cooked until tender but not brown.

Place mashed potatoes in mixing bowl..if leftovers..add 1/4 cup of milk to help soften...mix in with electric mixer.
Add cream cheese, salt( to taste ), pepper ( to taste ) and onion.

Mix on medium until well blended.

Place in a 2 quart baking dish.

Dot with butter.

Place in 350 degree oven for 30 to 40 minutes, until heated through and light brown.

Remove from oven and let sit for 10 minutes before serving.
