I love pork and was looking for something a bit different to do with the chops. Hope you like this.
NEED:
4 medium cut pork chops
1/2 cup of BBQ sauce - flavor of your choice
1/4 cup Orange Marmalade ( optional..but well worth using )
1 teaspoon garlic powder
1 teaspoon ground ginger
Place pork chops in a sprayed shallow cooking pan. Mix the other ingredients together and spoon over pork chops. Spread to evenly cover the top of each pork chop.
Bake at 400 degrees for 45 minutes.
*** a great side dish is baked potatoes. Wash the potatoes and make a slice in one side. Wrap with foil and place in the pre heated 400 degree oven while you prepare the pork chops. All will be done at the end of the pork chop cooking time.

Stuffed Pork Chops
If you buy pork chops already stuffed they cost a fortune. Making them yourself is very easy..and very tasty.
NEED:
4 thick cut pork chops
1 box of stuffing mix...pork flavor
Garlic, pepper and parsley flakes
Panko flakes or bread crumbs
With a sharp knife, carefully, cut through the side of pork chop * meat side NOT bone side) cut as deep to the bone as you can. Cut through the center of the side, leaving the sides intact..so that you form a pocket.
Mix the stuffing mix as directed on the box.
Stuff each pork chop very full. Using your hands works best. You can pack the stuffing in much better with your hands than with a spoon.
Season top of pork chops to your liking. Lightly cover with the Panko flakes or bread crumbs.
Place on a shallow baking pan, that has been sprayed with non stick cooking spray.
Bake for 1 hour at 325 degrees.

Wonderful Meatloaf
This is the simplest meatloaf and it's so moist. Hope you love it.
NEED:
1 1/2 pounds ground meat
1 cup oatmeal..quick cooking
1 egg
1 cup of milk
salt, pepper, garlic powder to taste
In large bowl mix ALL ingredients together, with your hands. You want to do it completely but in as short a time as possible. If you mix the meat for a long period of time it will give you a tough texture.
Place in a loaf pan and bake for 1 hour and 15 minutes at 325 degrees. Allow to sit,out of oven, for 10 minutes before removing from pan.
The oatmeal give you a wonderful rich and moist meatloaf.

Peeling a Hard Boiled Egg
I hate when I peel a hard boiled egg and the shell comes off in a ton of little pieces.
After taking some hints and experimenting with them a bit I have found an easy way to do this.
For me, a hard boiled egg has boiled 15 minutes and then is rinsed in cold water to cool enough to hold.
Roll the egg and make it crack all the way around the center. You'll know if its cracked by the feel. It'll be "soft" as you go around.
Gentle push at the crack line with your thumb and push it toward which ever hand you are using. It "should" come completely off that end. Then do the other side. If perfect, it will come off in two sections. At worst, the one section will hang on to the other a bit and it will come off in one piece that sort of moves around the egg. The great thing is, it comes off with easy and NOT a ton of small pieces.

Melt Away Cookie Bars
NEED:
1 cup margarine, room temperature
1 cup sugar
1 egg, separated
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup chopped pecans, divided
Cream margarine and sugar until light and fluffy; stir in egg yolk, vanilla, and flour, blending well. Stir in 1/2 cup chopped pecans. Spread dough evenly in a lightly buttered 15x10x1-inch baking pan. Beat egg white until frothy; brush over dough. Sprinkle remaining pecans over egg white layer. Bake melt away bars at 350° for 25 to 30 minutes, until lightly browned.
Makes about 36 cookie bars

1 cup sugar
3/4 cup packed brown sugar
1 cup chopped nuts
1/4 cup milk
1 tablespoon orange juice
1 egg
3 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups chopped cranberries
Blend together butter and both sugars. Beat in orange juice and egg. Slowly add all dry ingredients until well mixed. Stir in cranberries and nuts. On sprayed or greased cookie sheet, drop by teaspoonfuls.
Oven at 375 degrees. Bake 13 minutes or until light brown. Makes approx. 10 dozen cookies.

Blend butter and sugar until well mixed. Slowly work in flour, by hand. Mix well and chill.
Roll dough to 1/3 to 1/2 inch think. Cut into shapes of choice. Bake on ungreased baking sheet.
Oven at 350 degrees. Bake for 20 to 25 minutes. Tops will not brown. Cool on wire rack. Makes 2 dozen cookies ( depending upon shape)
